On #DeliciousNaija this week, there’s a twist on the traditional way of making coconut rice and coconut oil isn’t as hard to prepare as you thought. There’s just so much to learn.

METHOD
Break, the coconut
Save the water and carve out the flesh into a blender with the coconut water.
Add more water to get enough milk and blend
Pour the blend into a pot, Heat the coconut milk to a boil.
Wash and add the rice, pepper, onion, ginger, garlic and MAGGI Cubes and tablet.
Stir well and add salt to taste and cook till rice begins to soften. Check the texture of the rice and reduce the heat.
Add the chopped the prawns, tomatoes give it a gentle stir and cover with foil to simmer gentle until rice is cooked but juicy
Add the spring onions and turn off the heat.
Serve hot with fried peppered baby crabs.
